Tom Yum Detox Soup (v)
When your sick, or just need to relax and reset your system, you probably go get or make a bowl of chicken noodle soup. But sometimes this classic can get old, and it is not vegetarian friendly, so I came up with a twist on a classic comfort food: Tom Yum Detox Soup. This broth based soup is quick easy and will feel like home.
Ingredients: (1-2 people serving size..makes about _____ bowls)
4 garlic cloves (minced)
1 tablespoon vegtable oil 2 cups vegtable broth
3 tablespoons lime juice
3 tablespoons soy sauce
2 tablespoons honey
Handful of cilantro leaves
2 tablespoons chilli paste (add lessor more depending on desired spice level)
2 1/2 tablespoons Apple Cider Vinegar
1/4 cup cubed tofu
Handful of sliced mushrooms
Directions:
1. Put a boiling pan on the stove (low heat), and add the vegtable oil and garlic. Let it roast until golden brown.
2. Add the tofu and mushrooms and stir until they are completely cooked.
4. Now, add the vegtable broth and lime juice and bring it to a boil. Once it starts to boil add the soy sauce, chilli paste, cilantro, honey, and ACV.
5. Let these simmer on the stove for a while, and serve.
Note: For more flavor add red curry paste or thai seasoning.
