Thai Cabbage Fried Rice (V)

Looking for a super easy, but super tasty meal. Look no further!

(modify amounts based on servings needed, this recipe is based on serving size for four people)

Takes around 10 minutes

Ingredients:

2 cups white or brown rice (cooked)

3 cups cabbage

1/2 cup peanut sauce

1 cup soy sauce

3 tablespoons honey

1 orange

2 tablespoons Sriracha

2 tablespoons red curry paste

3/4 cup frozen peas and carrots

2 garlic cloves

1 tablespoon vegetable oil

Directions:

1. In a large pan, put vegetable oil in and place on medium heat.

2. Chop up garlic cloves and wash the cabbage, peas, and carrots.

3. Next, add the garlic cloves to the large pan.

4. Once the garlic turns a light brown add the peas and carrots.

5. Next add the soy sauce, honey, juice of the orange, sriracha, red curry paste, and peanut sauce to the pan.

6. Wait about 2 minutes for the sauce to start sizzling and then add the cabbage and rice.

7. Stir the rice, cabbage and vegetables for about two minutes and then let everything sit in the pan for about 3-5 minutes or until fully cooked.

8. Now your dish is ready be served! Enjoy!
